Ingredients:
- 1 liter full-fat milk
- 1/2 cup sugar
- 1/2 teaspoon cardamom powder
- A handful of chopped nuts (almonds, pistachios, cashews)
- Saffron strands for garnish
Instructions:
1. Pour the milk into a heavy-bottomed pan and bring it to a boil.
2. Once it boils, reduce the heat to low and simmer the milk, stirring frequently to prevent it from sticking to the bottom of the pan. Continue simmering until the milk reduces to about half its original quantity. This may take 45 minutes to 1 hour.
3. Add the sugar and cardamom powder to the milk. Stir well and continue to simmer for another 10-15 minutes until the sugar dissolves, and the rabdi thickens.
4. Remove the pan from heat and let it cool to room temperature.
5. Once cooled, refrigerate the rabdi for a few hours or until it's cold.
6. Before serving, garnish with chopped nuts and saffron strands.
7. Serve the unique rabdi chilled and enjoy!
