- 2-3 tablespoons tamarind chutney
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Sev (thin gram flour noodles)
- Chopped green chilies (optional, for heat)
- Chopped mint leaves for garnish

**Instructions:**

**For the Papdi:**

1. In a mixing bowl, combine all-purpose flour, semolina, baking soda, and a pinch of salt.

2. Add ghee and mix well. The mixture should resemble breadcrumbs.

3. Slowly add water and knead the dough. It should be firm yet smooth.

4. Cover the dough and let it rest for about 15-20 minutes.

5. Roll out the dough into a thin sheet and cut small discs using a cookie cutter or the rim of a small bowl.

6. Heat oil in a deep frying pan and fry the papdi until they are golden brown and crispy. Drain excess oil on a paper towel and set aside.

**For the Chaat:**

1. In a large mixing bowl, combine boiled chickpeas, boiled potatoes, chopped onions, chopped tomatoes, and cilantro.

2. In a separate bowl, whisk the plain yogurt until smooth. Add a bit of water if it's too thick to drizzle.

3. To assemble, place some papdi on a serving plate. Top them with the chickpea-potato mixture.

4. Drizzle yogurt and tamarind chutney over the papdis and vegetables.

5. Sprinkle roasted cumin powder, red chili powder, and salt over the chaat.

6. Add sev for crunch and chopped green chilies if you like it spicy.

7. Garnish with chopped mint leaves for a fresh touch.
