### Spicy Mango Avocado Quinoa Salad




#### Ingredients:

**For the Salad:**
- 1 cup quinoa
- 2 ripe mangos, diced
- 2 ripe avocados, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 can black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1 jalapeño, finely chopped (optional, for extra heat)

**For the Dressing:**
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tbsp apple cider vinegar
- 1 tsp honey or maple syrup
- 1 clove garlic, minced
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste

#### Instructions:

1. **Cook the Quinoa:**
   - Rinse the quinoa under cold water.
   - In a medium pot, bring 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and water is absorbed. Fluff with a fork and let it cool.

2. **Prepare the Dressing:**
   - In a small bowl, whisk together the olive oil, lime juice, apple cider vinegar, honey or maple syrup, minced garlic, ground cumin, smoked paprika, salt, and pepper.

3. **Assemble the Salad:**
   - In a large bowl, combine the cooled quinoa, diced mangos, avocados, red bell pepper, cherry tomatoes, red onion, cilantro, black beans, corn, and jalapeño (if using).

4. **Dress the Salad:**
   - Pour the dressing over the salad and gently toss to combine. Ensure all ingredients are evenly coated with the dressing.

5. **Serve:**
