**Rose Infused Raspberry Eclairs**
Ingredients:
- 1 cup fresh raspberries
- 1/2 cup granulated sugar
- 1 tbsp rose water
- 1 cup heavy cream
- 1 package puff pastry sheets
- 1/2 cup powdered sugar (for dusting)
Instructions:
1. In a saucepan, simmer raspberries, granulated sugar, and rose water until a thick compote forms. Set aside to cool.
2. Preheat oven according to puff pastry package instructions.
3. Roll out puff pastry sheets and cut into rectangular strips. Bake until golden brown.
4. Whip heavy cream until stiff peaks form.
5. Once pastry strips are cool, cut in half horizontally. Fill with whipped cream and raspberry compote.
6. Place the other half of the pastry on top and dust with powdered sugar.
