"Aloo Gobi Masala":

**Ingredients:**

- 2 cups cauliflower florets
- 2 medium-sized potatoes, peeled and cubed
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tablespoons vegetable oil

**Instructions:**

1. In a pan, heat oil. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until they turn golden brown.

3. Stir in ginger-garlic paste and green chilies. Sauté for a minute until the raw aroma disappears.

4. Add chopped tomatoes and cook until they become soft and the oil starts separating from the masala.

5. Mix in turmeric powder, coriander powder, red chili powder, and salt. Cook for another 2-3 minutes.

6. Add cauliflower florets and potato cubes. Stir well to coat them with the masala.

7. Cover the pan and let it cook on low heat. Stir occasionally to prevent sticking.

8. Cook until the vegetables are tender but not mushy.

9. Sprinkle garam masala and fresh coriander leaves. Mix gently.

10. Serve hot with chapati or rice.
