Ingredients:
For the Dough:
- 1 cup whole wheat flour
- 1/4 cup besan (gram flour)
- 1/4 cup fresh fenugreek leaves (methi), finely chopped
- 2 tablespoons yogurt
- 1 tablespoon oil
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder (adjust to your spice preference)
- 1/2 teaspoon cumin seeds
- Salt to taste
- Water, as needed
For Rolling and Cooking:
- Oil or ghee for cooking
Instructions:
1. In a mixing bowl, combine whole wheat flour, besan, chopped fresh fenugreek leaves, yoghurt, oil, turmeric powder, red chilli powder, cumin seeds, and salt.
2. Mix the ingredients, and then add water gradually to form a soft and smooth dough. Knead it for a few minutes until the dough is pliable. You can add a touch of oil if needed to make it non-sticky.
3. Divide the dough into small, equal-sized balls, roughly the size of a golf ball.
4. Heat a griddle or a non-stick pan over medium heat.
5. Take one dough ball, flatten it slightly, and dip it into dry wheat flour to prevent sticking. Roll out the dough ball into a thin, round thepla using a rolling pin. Aim for a thickness similar to that of a tortilla.
6. Carefully transfer the rolled thepla onto the hot griddle or pan. Cook until you see small bubbles forming on the surface.
7. Flip the thepla and apply a little oil or ghee on the cooked side. Press gently with a spatula to ensure even cooking.
8. Flip again and apply oil or ghee on the other side. Continue to cook until both sides are golden brown and have a few brown spots.
9. Repeat the same process for the remaining dough balls, rolling and cooking each thepla.
10. Once cooked, remove the thepla from the griddle and keep them warm in a clean kitchen towel to maintain their softness.
11. Serve the Methi Thepla hot with yoghurt, pickle, or any chutney of your choice. They are also great for packing in lunchboxes or picnics.
