**Ingredients:**
- 1 cup whole wheat flour
- 1/2 cup ghee (clarified butter)
- 1/2 cup jaggery or sugar (adjust to taste)
- 1/4 cup water
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/4 tsp cardamom powder
- A pinch of saffron strands (optional)
- 2 cups of water
- A pinch of salt

**Instructions:**

1. **Roast the Wheat Flour:**
   - Heat a heavy-bottomed pan or kadhai over low-medium heat and add the wheat flour.
   - Dry roast the wheat flour while continuously stirring to prevent burning. Roast until it turns golden brown and gives off a nutty aroma. This may take around 15-20 minutes. Be patient, as this step is crucial for the flavor.

2. **Prepare the Jaggery Syrup:**
   - In a separate saucepan, add the jaggery (or sugar) and 1/4 cup of water.
   - Heat this mixture over low heat until the jaggery (or sugar) dissolves completely. Strain to remove impurities if necessary.

3. **Combine Roasted Wheat Flour and Jaggery Syrup:**
   - Once the wheat flour is roasted to perfection, pour the jaggery syrup into the pan with the roasted wheat flour.

4. **Cook the Mixture:**
   - Stir continuously as you combine the syrup and flour. Cook until the ghee begins to separate from the mixture, and it becomes thick and starts leaving the sides of the pan. This could take about 10-15 minutes.

5. **Add Nuts and Flavorings:**
   - Stir in the chopped nuts, cardamom powder, and saffron strands (if using). Mix well.

6. **Boil Water and Add to the Mixture:**
   - In a separate pot, boil 2 cups of water with a pinch of salt.

7. **Gradually Add Boiling Water:**
   - Gradually pour the boiling water into the wheat flour mixture while stirring continuously. Be cautious as it may splutter.

8. **Cook Until Thickened:**
   - Continue cooking and stirring until the mixture thickens and reaches your desired consistency. It should be smooth and lump-free.

9. **Serve Hot:**
   - Laapsi is traditionally served hot. Garnish with extra chopped nuts if you like.

10. **Enjoy:**
    - Serve this delicious wheat flour Laapsi as a dessert or a sweet treat. It's perfect for special occasions or as a comforting dessert after a meal.

Enjoy your homemade Laapsi!
