**Ingredients:**
For Dhokla Batter:
- 1 cup besan (gram flour)
- 1/2 cup suji (semolina)

**Instructions:**
1. **Prepare Dhokla Batter:**
- In a mixing bowl, combine besan, suji, yogurt, ginger paste, green chili paste, turmeric powder, and salt.
- Gradually add water to form a smooth, lump-free batter. The consistency should be similar to pancake batter.
2. **Ferment the Batter:**
- Allow the batter to ferment for 30 minutes to 1 hour. This helps in making the dhoklas fluffy.
3. **Prepare the Steamer:**
- Grease a dhokla plate or any flat-bottomed dish.
- Fill the steamer with water and let it come to a boil.
4. **Add Eno Fruit Salt:**
- Just before pouring the batter into the plate, add Eno fruit salt to the batter and mix well. You will notice bubbles forming.
5. **Steam the Dhokla:**
- Pour the batter into the greased plate.
- Place the plate in the steamer and steam for about 15-20 minutes or until a toothpick inserted comes out clean.
6. **Prepare Tempering:**
- Heat oil in a small pan. Add mustard seeds, cumin seeds, asafoetida, curry leaves, and slit green chilies.
- Allow the mustard seeds to splutter and the curry leaves to become crisp. Add chopped coriander leaves. Turn off the heat.
7. **Cut Dhokla:**
- Once the dhokla is steamed, let it cool for a few minutes. Then, cut it into squares or diamonds.
8. **Temper the Dhokla:**
- Pour the prepared tempering over the cut dhokla, ensuring it gets into the cuts.
9. **Garnish:**
- Garnish with freshly grated coconut and chopped coriander leaves.
10. **Serve:**
- Serve the dhokla pieces with mint-coriander chutney or tamarind chutney.
