Ingredients:
For the Besan Mixture:
- 1 cup besan (chickpea flour)
- 1/2 cup ghee (clarified butter)
- 1 cup milk
- 1 cup khoya (milk solids)
- 1 cup powdered sugar
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
For the Garnish:
- 2 tablespoons sliced almonds
- 2 tablespoons chopped pistachios
Instructions:
1. Heat a heavy-bottomed pan on medium heat. Add the besan and ghee, and roast them together until the besan turns golden brown. Stir constantly to avoid burning.
2. Once the besan is roasted, reduce the heat to low and add the milk gradually while stirring continuously. Be cautious as the mixture might splutter.
3. Keep stirring until the mixture thickens and starts leaving the sides of the pan. This should take about 10-15 minutes.
4. Add the khoya and continue to stir until it's well incorporated into the mixture. The mixture should have a smooth consistency.
5. Now, add the powdered sugar and cardamom powder. Mix well to combine all the ingredients.
6. If using saffron, dissolve a pinch of saffron strands in a tablespoon of warm milk and add it to the mixture for a lovely aroma and color.
7. Keep stirring the mixture on low heat until it starts to leave the sides of the pan and becomes a thick, fudgy consistency. This might take another 10-15 minutes.
8. Grease a square or rectangular tray with a little ghee. Pour the prepared mixture into the tray and spread it evenly using a spatula.
9. While the mixture is still warm, sprinkle the sliced almonds and chopped pistachios on top, gently pressing them in.
10. Allow the mohanthal to cool down completely, then cut it into squares or diamond shapes.
