**Ingredients:**

For Bhalla:
- 1 cup urad dal (white lentils)
- 1/4 cup moong dal (split yellow lentils)
- 2-3 green chillies, finely chopped
- 1-inch piece of ginger, grated
- A pinch of asafoetida (hing)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon baking soda
- Salt to taste
- Oil for deep frying

For Yogurt Mix:
- 2 cups thick plain yoghurt (curd)
- 1/2 cup water
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon red chilli powder
- Salt to taste

For Tamarind Chutney:
- 1/2 cup tamarind pulp
- 1/4 cup jaggery or brown sugar
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon red chilli powder
- Salt to taste



For Green Chutney:
- 1 cup fresh coriander leaves
- 1/2 cup mint leaves
- 2-3 green chillies
- 1-inch piece of ginger
- 1 tablespoon lemon juice
- Salt to taste

For Garnish:
- 2 tablespoons chopped fresh coriander leaves
- 1/4 cup pomegranate seeds

**Instructions:**

**1. Preparing Bhalla:**
1. Rinse urad dal and moong dal thoroughly under running water.
2. Soak the dals in enough water for 4-5 hours.
3. Drain the water and grind the soaked dals to a smooth paste using a little water if needed.
4. Add chopped green chillies, grated ginger, asafoetida, cumin seeds, baking soda, and salt to the dal paste. Mix well.
5. Heat oil in a deep pan for frying. Take small portions of the batter and drop them gently into the hot oil.
6. Fry the dumplings until they turn golden brown and crispy. Drain excess oil by placing it on a paper towel.

1. In a small saucepan, combine tamarind pulp, jaggery or brown sugar, roasted cumin powder, red chilli powder, and salt.
2. Cook the mixture over low heat until it thickens and forms a smooth chutney. Add water if needed to adjust the consistency.

**4. Preparing Green Chutney:**
1. Blend fresh coriander leaves, mint leaves, green chillies, ginger, lemon juice, and salt in a blender to form a smooth chutney. Add a little water if required.

**5. Assembling Dahi Bhalla:**
1. Take a few fried balls and soak them in warm water for 15-20 minutes to make them soft.
2. Gently squeeze out the excess water from the soaked balls and arrange them on a serving plate.
3. Pour the prepared yoghurt mix generously over the bhallas.
